Congee, Fully Loaded

Further adventures in β€œrice is totally breakfast:” ginger-scallion congee cooked in good homemade chicken broth with Vietnamese ham, poached backyard egg and bok choy, topped with shaved salt-cured duck egg, fried shallots, chile oil and cilantro. It’s somehow both calming and stimulating, and so satisfying. 

Yachaejeon

Fridge-clearing yachaejeon (vegetable pancake; center) made of gai lan, carrots, red bell pepper, zucchini, shimeji mushrooms, onions, and garlic chives (from the garden!) in a batter of flour and backyard eggs, seasoned with sesame oil, soy sauce, ginger and garlic. The rest of the stuff: 

Quick Jook Can Happen

I made this by simmering leftover rice in chicken broth until the rice really softened up and topped it with whatever I had lying around. I personally like having the grains intact, but you could always go a bit longer if you prefer it more 

Spam Musubi Fried Rice

Summer Ramen Makes Me Feel Fine

Miyazaki Style Sushi Salad

The boy wanted Spaghetti-Os, so I fixed myself a Miyazaki-style sushi salad (krab, iceberg, kewpie) bolstered by a little omelet and cucumber-hijiki sunomono, plus a little rice (shrimp-nori furikake) and miso. It might look light, but I got all turnt on @gueropdx for lunch today 

Loco Moco

Had a leftover Nicky Farms venison patty and some leftover rice, so I made loco moco of course! Topped with ramen broth gravy (added the veggie pack from some @nongshimusa Shin Ramyun for kick), backyard egg, homemade tamago-nori furikake, served with a little side salad 

Leftovers Surprise

Had some leftover creamed peas and favas from @laurelhurstmarket (and the cream, spinach, and pancetta left from the mussels), so I did what I do best: hacked the shit out of that stuff into a whole new meal! Cooked a little orecchiette, Vietnamese melon, bolting
