Autumn Ramen

Made some really delicious vegetarianish autumn ramen with @umiorganic noodles and tempura (kabocha-like bitterroot buttercup squash, purple sweet potato, shiitake, pumpkin blossom, onion, and green bean in simple rice flour/seltzer batter). Broth is smoky-sweet and concentrated; rich chicken stock seasoned with tentsuyu (use mushroom broth

Figgy Pudding

This is especially nice rewarmed as a coffee cake to serve for breakfast. Warm figgy bundt cake made with puréed roasted figs that I froze back in July, studded with pistachios, glazed with honey and melted butter, and topped with a diced brown turkey fig

Guinea Hen with Blackberry Mole

Mole is one of those things. It takes time and a million ingredients (or twenty, in this case), but it’s not actually that hard to make. You just have to commit to it. Ingredient list after the jump. Smoked Grimaud Farms guinea fowl in homegrown

Water Buffalo Barbari Bread

Fresh zucchini blossoms and garlic flowers look pretty and belie this dish’s utter simplicity. Locally raised Nicky Farms water buffalo tastes to me like a slightly more iron-rich bison, making it a natural fit for bold Middle Eastern spices. Here I’ve browned it in a

Old Bay Grilled Shrimp

Making one’s own Old Bay is a cinch: just mix together mustard seed, celery seed, a little coriander seed, and thyme (powder these up) with paprika, salt, and a pinch of pumpkin pie spice (mine is a combination of cinnamon, clove, star anise, fennel seed,

Staycation

I was craving a teriyaki Trader Vic's-style thing so I grilled up a Nicky Farms wild boar patty, yakionigiri (grilled rice balls), fresh pineapple and bell peppers. The wild boar is really nice — it's leaner and more flavorful than farm pork. It goes well

Peking Game Hens

Peking-style @maryschicken game hens, stuffed with garlic and lacquered with maltose, homemade five spice, and soy, then smoked over mesquite, green bamboo, and branches from my peach tree. The little birdies are available at @newseasonsmarket. SO TINY AND TENDER! I served these baby beauts with

Buffalo Ribeye Flatbreads

Grilled Nicky Farms bison ribeye with grilled flatbread; a gremolata of carrot tops, mint, and lovage flowers (all from the garden), lemon juice and garlic; quick-pickled ramps and green strawberries; opal basil flowers, parsley flowers, and salad burnet from the garden; purple cauliflower and carrot

Pistachio-Rose Cake from the City of Roses

Teacake du jour: baklava-inspired! Equal parts hazelnut meal and AP flour, pistachios, extra butter and egg for richness, sweetened with @portlandsyrups Rose Cordial and @oldbluerawhoney bigleaf maple honey, studded with pistachios. When it came out of the oven I soaked it in @thomasandsonsdistillery White Rose

Pork Brisket is a Thing

A beautiful @tailsandtrotters pork brisket (it's a thing!) resting after smoking and slow-roasting. I'll slice it up and serve it with orzo pilaf (smoked zucchini, peppers, herbs from the garden, smoked Russian cheese, pine nuts). #dinnertonight #meatconcierge 🍖 🍖 🍖 🍖 🍖 #pork #meat #bbq
