Hoo, boy was this delicious. Maybe in the top five bowls of homemade ramen? This is iekei (“homestyle”) ramen inspired by the bowls I ate in Richmond, British Columbia — chicken stock and dashi (with splashes of shoyu and sake for seasoning), roasted @maryschicken game hen (+ crispy skin, instead of chashu), bean sprouts and homegrown gai lan (instead of spinach), backyard egg, and exquisitely chewy, bouncy @umiorganic noodles. Oh! And homemade black garlic oil (thanks for the very straightforward recipe, @kenjilopezalt !). Game hens roast up in about a half hour in a hot oven, making this ramen a breeze on a weeknight — get them from your good buddies at @nicky.usa or at @newseasonsmarket.

Bison-Okara Meatballs

How did I turn one measly pound of Nicky Farms ground bison into fourteen large meatballs? By cutting the meat by half with okara from Ota Tofu! After they extract all the soy milk, the pressed-out soy beans form a crumbly substance that’s high in protein and fiber, ready to be flavored with garlic, tons of herbs, and a little cheat (chicken bouillon powder). The rest of the typical meatball ingredients are there: an egg, panko breadcrumbs, a splash of milk and a little Worcestershire sauce. 🍝 🍝 🍝This bison is raised by @stangelbisonranch in the scenic majesty of the Wallowas, available through @nicky.usa at finer grocery stores around the Northwest. And the okara is free at Ota — just show up with a container and nice manners and they’ll give you as much as you want.
