Wild Boar Pörkölt with Hand-Cut Dumplings

View this post on Instagram Happy Spring Festival, friends! In honor of Year of the Pig I made a boar pörkölt (kind of like goulash) with hand-cut dumplings, fortified with Uyghur flavors. That means mixing Chinese Muslim and Eastern European ingredients — both are influenced

Big Smokies

Kitschy party food is the best. View this post on Instagram I love kitschy party food *way* too much. But those giant vacu-packs of feedlot beef/pork wienies (aka meats of questionable provenance) are kinda gross. Here’s a solution! Brown and slice two packs of @nicky.usa

A Collation of Indian Foods

I made saag paneer completely from scratch and it is so much better than anything I’ve had in restaurants (a testament to the overall lack of great Indian food in Portland more than my cooking prowess, but freshness goes a long way). The boar korma

Rigatoni with Wild Boar Ragù

Here’s a very simple and *fast!* ragù of @nicky.usa wild boar stew meat, pressure cooked with a few cloves of garlic, some minced carrot and a small onion, plus a pint of homegrown tomatoes that I put up last summer (plus Italian seasonings and S&P).

Sous Vide Venison and Warm Kamut Salad

This venison is ridiculously good, but the salad? Five stars, would visit again. Don’t look now, but Valentine’s Day is just around the corner. Practice the gentle art of seduction by staying in to cook for that special someone (or #treatyoself) with this sexy plate:

Wild Boar Mapo Tofu

You can make this quickly by using store-bought Sichuan chile oil, but it’s also nice to mace yourself toasting Sichuan peppercorns and facing heaven chiles in your wok to make mala oil from scratch. Nicky Farms ground wild boar mapo tofu, because sometimes you need

Staycation

I was craving a teriyaki Trader Vic's-style thing so I grilled up a Nicky Farms wild boar patty, yakionigiri (grilled rice balls), fresh pineapple and bell peppers. The wild boar is really nice — it's leaner and more flavorful than farm pork. It goes well

Loco Moco

Had a leftover Nicky Farms venison patty and some leftover rice, so I made loco moco of course! Topped with ramen broth gravy (added the veggie pack from some @nongshimusa Shin Ramyun for kick), backyard egg, homemade tamago-nori furikake, served with a little side salad
