Shio Koji-Aged Ranch Steak Sandwich is Best Steak Sandwich

I got this shio koji on Amazon, but will check Uwajimaya for a locally made koji for my next project.

Beauty shots of the purty little shio koji-aged @creekstone_farms ranch steaks. Ranch steaks come from the chuck primal, and here I’ve aged them for three days in the fridge, uncovered but for the shmear of wet koji paste. Then I seared them on the grill side of my @lecreuset cast iron flat top (pretty grill marks on the second shot). The koji not only makes this affordable cut extremely tender and flavorful, but it caramelizes really nicely into a delicious crust. Since the shio koji is already salty, I only finished the steaks with a tiny crunch of @jacobsensaltco black garlic salt after they rested for a few minutes.
