Today is “Gnocchi Thursday” at the divine @nostranapdx, but in case you’re too lazy to leave your house, this is a *really* good and very fast knockoff of their gnocchi with beef and pork ragù with red wine and parmigiano ($19). It’s Nicky Farms ground bison and wild boar browned with a coarse purée of onion and garlic, with a little butter, a splash of garnacha (plus a little homegrown heirloom tomato sauce for zazz and body), parm, oregano, S&P and a tiny pinch of chile. Don’t @ me, but the ragù is served with store-bought gnocchi (hey, at least it’s imported from Italy!), and a bit of the cooking water was added to the sauce to make it more silky. Done in under thirty minutes, no reservations required. 🍖 🍝 🍖 Bison and wild boar are like beef’s and pork’s sexier, more interesting cousins, and thanks to @nicky.usa, one-pound packs are available at better-stocked groceries around the Northwest (like @newseasonsmarket and @metmarket). 🍖 🍝 🍖 🍝#meatconcierge #nickyfarms #bison #boar #feralswine #wildboar #buffalo #pasta #gnocchi #italianfood #dumplings #homemade #meat #ragu #meatsauce #redsauce #foodstagram #food52 #instayum #instafood #instagood #forkyeah #carbs #gluten
