I Did Not Invent African Ramen

Africans totally eat ramen. Think about it: Maggi is ubiquitous throughout the continent and Asia. And the flavors of Nigerian peppersoup make perfect sense slickered all over noodles. FURTHERMORE, venison is a perfect choice for peppersoup, unless you can sustainably source your bushmeat. When I remake this (which I will definitely do), I’ll stir some crab paste into the broth.

Every year during #blackhistorymonth I try and learn more about the many cuisines of the African continent. This year I learned about Nigerian peppersoup and made some β€” as ramen! β€” with @umiorganic noodles, in a venison-oxtail broth flavored with tamarind, pounded dried shrimp, kili pepper (aka grains of Selim), Tasmanian bush pepper, grains of paradise, nutmeg, allspice, ginger, chile and Maggi. These are spices I had, but evidently you can just buy peppersoup bouillon cubes? Served here with slices of gorgeous venison leg roast from @nicky.usa, the oxtails from the broth, and yu choy because I don’t have any other greens in the house. πŸ’š ❀️ πŸ–€ πŸ’š ❀️ πŸ–€ Oh, and before you look at me all sideways, you should know Nigerians eat the shit out of some ramen.
