View this post on Instagram This is West African-style chicken peanut stew — @maryschicken game hen (from @nicky.usa), sautéed in dende and stewed with onions, garlic, ginger, tomatoes and ajvar (I didn’t have any eggplant or peppers, so this was actually perfect). I added ground peanuts and pounded dried shrimp for added flavor. The spices are my own blend of kili pepper and grains of paradise, garam masala and berbere (all freshly ground), and there’re a couple Maggi cubes for salt. It’s richly flavored, deeply savory and satisfying. 🥘 🍚 🥘 🍚 🥘 Every February, to observe #BlackHistoryMonth I try and learn more about African cooking and the evolution of African cuisine in America.
