View this post on Instagram How did I turn one measly pound of Nicky Farms ground bison into fourteen large meatballs? By cutting the meat by half with okara from Ota Tofu! After they extract all the soy milk, the pressed-out soy beans form a crumbly substance that’s high in protein and fiber, ready to be flavored with garlic, tons of herbs, and a little cheat (chicken bouillon powder). The rest of the typical meatball ingredients are there: an egg, panko breadcrumbs, a splash of milk and a little Worcestershire sauce. 🍝 🍝 🍝This bison is raised by @stangelbisonranch in the scenic majesty of the Wallowas, available through @nicky.usa at finer grocery stores around the Northwest. And the okara is free at Ota — just show up with a container and nice manners and they’ll give you as much as you want.
