View this post on Instagram I’ve finally leveled up enough as a baker that I can throw together a naan or pita dough without a recipe, just on instinct and touch, and have warm flatbread in about a half hour. ✨ 🌝 ✨This was roughly a cup of AP flour, a few pinches of salt and baking powder, about 1/4 cup of buttermilky homemade cottage cheese and a few splashes of whey (from recipe tests for @urbancheesecraft), and a goodly blorp of sourdough starter. Mix it and knead it a little, adding more “dry” or “wet” as needed until the dough is as soft and slack as a mother’s breast. Leave it alone in a comfortable place for fifteen minutes or so, then cut it into eight portions. Roll these out on a floury surface, with a floury rolling pin, and then bake them on a medium-hot griddle or frying pan, well-lubricated with oil or ghee. Add another pinch of flaky sea salt when they’re golden on both sides.
