Foie Gras Miso Ramen

Gilding the lily + +   Here’s a big, lovely bowl of miso ramen with @hudsonvalleyfoiegras foie gras, sproingy @umiorganic noodles, kikurage (wood ear) mushrooms, butter corn, and a gorgeous backyard egg. Nori, toasted sesame, and scallions to garnish. The broth is dashi and homemade

Volga German Soul Food

My beautiful homemade bierocks made it into the “Global Comfort Foods” issue of Portland Monthly, along with a little about why this humble food is so important to me. My recipe is included — please note that they’re usually seasoned only with salt and pepper,

How the Father of Oregon Agriculture Launched a Doomed Quaker Sex Cult

I wrote a feature for this month’s Portland Monthly Magazine. It’s about the crazy life of Henderson Luelling, whose orchard was the birthplace of the Bing cherry, and who went on to launch a doomed free-lovers colony on Tiger Island.

Quick Jook Can Happen

I made this by simmering leftover rice in chicken broth until the rice really softened up and topped it with whatever I had lying around. I personally like having the grains intact, but you could always go a bit longer if you prefer it more

Sous Vide Venison Leg Roast with Winter Salads

These photos don’t do these dishes justice, but the venison was unbelievably tender and juicy. The pilaf is staying in my permanent rotation. Had a few homies over for dinner last night, and after thinking it over for a few days, I ended up abandoning

I Did Not Invent African Ramen

Africans totally eat ramen. Think about it: Maggi is ubiquitous throughout the continent and Asia. And the flavors of Nigerian peppersoup make perfect sense slickered all over noodles. FURTHERMORE, venison is a perfect choice for peppersoup, unless you can sustainably source your bushmeat. When I remake this (which I will definitely do), I’ll stir some crab paste into the broth.

Every year during #blackhistorymonth I try and learn more about the many cuisines of the African continent. This year I learned about Nigerian peppersoup and made some — as ramen! — with @umiorganic noodles, in a venison-oxtail broth flavored with tamarind, pounded dried shrimp, kili pepper (aka grains of Selim), Tasmanian bush pepper, grains of paradise, nutmeg, allspice, ginger, chile and Maggi. These are spices I had, but evidently you can just buy peppersoup bouillon cubes? Served here with slices of gorgeous venison leg roast from @nicky.usa, the oxtails from the broth, and yu choy because I don’t have any other greens in the house. 💚 ❤️ 🖤 💚 ❤️ 🖤 Oh, and before you look at me all sideways, you should know Nigerians eat the shit out of some ramen. RAMEN IS UNIVERSAL. 💚🍜🍖 💚🍜🍖 #inthenoodz #noodlehead #useyournoodle #meatconcierge #ramen #noodles #naijafood #africanfood #soup #noodlesoup #soupweather #foodstagram #instagood #instafood #f52grams #huffposttaste #buzzfeedfood #ramenhacks #venison #wildgame #spicy #maggi

Cocoa-Banana Breakfast Bread

Why should breakfast bars and protein cookies get all the glory? These mini-loaves have all the joyful decadence of a chocolaty banana bread while packing 14 grams of protein and nearly a quarter of a day’s recommended calcium. Plus it’s fiber-rich and high in iron.

Gnocchi with Bison and Wild Boar Ragu

Today is “Gnocchi Thursday” at the divine @nostranapdx, but in case you’re too lazy to leave your house, this is a *really* good and very fast knockoff of their gnocchi with beef and pork ragù with red wine and parmigiano ($19). It’s Nicky Farms ground bison and wild boar browned with a coarse purée of onion and garlic, with a little butter, a splash of garnacha (plus a little homegrown heirloom tomato sauce for zazz and body), parm, oregano, S&P and a tiny pinch of chile. Don’t @ me, but the ragù is served with store-bought gnocchi (hey, at least it’s imported from Italy!), and a bit of the cooking water was added to the sauce to make it more silky. Done in under thirty minutes, no reservations required. 🍖 🍝 🍖 Bison and wild boar are like beef’s and pork’s sexier, more interesting cousins, and thanks to @nicky.usa, one-pound packs are available at better-stocked groceries around the Northwest (like @newseasonsmarket and @metmarket). 🍖 🍝 🍖 🍝#meatconcierge #nickyfarms #bison #boar #feralswine #wildboar #buffalo #pasta #gnocchi #italianfood #dumplings #homemade #meat #ragu #meatsauce #redsauce #foodstagram #food52 #instayum #instafood #instagood #forkyeah #carbs #gluten

Black Radish Salad with Bacon

I had a couple of leftover bierocks from a shoot today (upcoming in @pomomagazine — stay tuned!), so tonight’s dinner was merely a matter of tossing together a nice little Rettichsalat mit Speck. This is just a bowl of matchstick-cut black radishes with @nueskes bacon,
